Roast Chicken Ala Ninas Recipe

My family loves my Filipino take on roast chicken. My youngest had this for lunch in school and her classmate would not believe her when she told them this was home-made, she was adamant her mama cooked it!!! Sweet :)

Directions

  1. marinate chicken in soy sauce/crushed garlic/pepper marinade for 2 hours
  2. cut-out garlic bulb on top. Put 1 each inside each chicken along with the lemon and bunch of spring onions
  3. in a small bowl mix olive oil, salt, pepper and rosemary. Spread it over the chicken and rub into all crevices to flavor it well
  4. place in rosting pans and put in chopped carrots and washed baby potatoes. Drizzele generously with olive oil to aid cooking and crispiness. Bake in the oven at 350 degrees covered in foil for 30 mins then without foil cover for another 20 oruntil golden brown.
  5. Enjoy!

    I usually deglaze the roasting pan with a bit of butter and flour to and add a bit of soy sauce (yes virginia soy sauce! I told you this is an asian take on it). I add a bit of chicken stock or plain water to make a gravy...soooo nice!
