Ingredients

  • 4 Tbsp. unsalted butter
  • 2/3 c. crushed crackers (I use Ritz)
  • 1/4 c. grated Parmesan cheese - (abt 1 ounce)
  • 1/2 tsp dry basil
  • 1/2 tsp dry oregano
  • 1/4 tsp garlic pwdr
  • 1 lb sole, scrod, perch or possibly other
  •     mild-tasting fish fillets
  •     Lemon wedges

Directions

  1. Preheat oven to 350 degrees.
  2. Heat the butter in a 9- by 13-inch pan in the oven. While it melts, combine everything else except the fish in a pie pan.
  3. Dip the fish around in the melted butter, dip each piece in the crumb mix, and return it to the baking pan.
  4. Bake the fillets for 20 to 25 min, or possibly till the fish flakes with a fork. Serve with lemon wedges, and good luck to you.
  5. This recipe yields 4 servings.
