Risotto with Caramalized Onions and Rosemary Recipe

Ingredients

  • Eggs (We can still get these at our Winter Market which is every other week.)
  • Risotto with Caramelized Onions and Rosemary
  • Inspired by Joshua Wesson’s Caramelized-Onion Risotto with Bacon
  • 4 T. extra-virgin olive oil, divided
  • 1 1/2 onion, halved lengthwise and thinly sliced crosswise (about 2 cups)
  • 1/4 c. white wine
  • 2 quarts vegetable or chicken stock
  • 2 garlic cloves, minced
  • 2 c. arborio rice
  • 2 t. coarsely chopped fresh rosemary
  • 1/2 c. freshly grated Parmesan cheese, plus more for serving
  • Salt and freshly ground pepper
