Ingredients

  • 6 ounce can pitted ripe olives, liquid removed and minced
  • 1 lg. tomato, seeded and minced
  • 1/2 c. minced cilantro
  • 1 sm. jalapeno chili, seeded and chopped (WEAR RUBBER GLOVES)
  • 3 T extra virgin olive oil
  • 2 T fresh lime juice
  • Salt and pepper to taste

Directions

  1. In bowl, put together all ingredients. Serve the salsa as a dip with corn chips or possibly as accompaniment to grilled meats. 2 cups.
