Ingredients

  • 1 c. all-purpose flour
  • 1 Tbsp. granulated sugar
  • 1/4 tsp salt
  • 1 tsp baking pwdr
  • 4 x Large eggs
  • 1 c. ricotta cheese
  • 1 c. small-curd cottage cheese
  • 3/4 c. non-fat lowfat milk
  • 1 tsp vanilla extract
  • 1 tsp grated lemon rind

Directions

  1. Combine the flour, sugar, salt, and baking pwdr in a large bowl. In a separate bowl beat the Large eggs with the ricotta, cottage cheese, lowfat milk, vanilla, and lemon zest. Add in this mix to the flour mix, stirring till moistened.
  2. Don't stir any more than necessary to thoroughly combine ingredients. Drop a small amount on a lightly greased griddle or possibly skillet over moderate heat and turn when the edges appear golden and dry, and the surface is bubbly.
  3. This recipe yields 24 pancakes.
