Recipe Retake Homemade
I do not have a new recipe for you today, I am sorry to say. And my weekend is going to be consumed with early prep for Thanksgiving.
Wait, Kait it’s Saturday. What are you doing FIVE WHOLE DAYS before Thanksgiving?
Well, I shall tell you. I have two main purposes today:
Make chicken stock.
Batch cook and empty the fridge to make way for the 3 gallon bucket in which I shall be brining the turkey starting on Monday.

%20and%20shall%20start%20with%20that.%20%20Now%20you%20have%20two%20options%20for%20making%20stock,%20and%20I%E2%80%99ve%20used%20both.%20%20You%20can%20roast%20the%20chicken,%20then%20debone%20and%20make%20stock%20with%20that,%20or%20you%20can%20toss%20the%20leg%20quarters%20in%20the%20crock%20pot%20all%20day%20and%20cook%20them%20that%20way%20before%20deboning%20and%20so%20on%20and%20so%20forth.%20%20Having%20done%20both,%20the%20latter%20is%20easier,%20but%20I%20think%20the%20former%20makes%20for%20better%20stock.%20%20I%20have%20no%20science%20to%20back%20me%20up%20on%20this,%20just%20personal%20preference.%20%20So%20toss%20your%20chicken%20or%20your%20leg%20quarters%20(lightly%20coated%20with%20olive%20oil)%20into%20your%20roasting%20pan%20at%20350%20degrees%20and%20cook%20based%20on%20weight.%3C/p%3E%3Cp%3EOnce%20cooked,%20remove%20from%20oven,%20cool,%20and%20drain%20off%20the%20juices%20from%20the%20pan%20into%20a%206%20quart%20crock%20pot.%20%20Once%20the%20chicken%20is%20cool,%20remove%20the%20skin%20and%20toss%20it.%20%20You%20don%E2%80%99t%20want%20this%20in%20your%20stock%20because%20it%20will%20make%20it%20fatty.%20%20Remove%20the%20chicken%20and%20set%20aside%20for%20any%20future%20recipes%20calling%20for%20precooked%20chicken.%20%20I%20like%20to%20store%20mine%20in%202%20cup%20servings%20in%20freezer%20bags%20to%20use%20in%20soups,%20casseroles,%20and%20the%20like.%20%20Place%20your%20bones%20in%20the%20crock%20pot%20(be%20sure%20to%20try%20to%20get%20those%20gristly%20cartilage%20bits%20out).%20%20Next%20you%E2%80%99re%20going%20to%20take%20a%20couple%20of%20stalks%20of%20celery,%20an%20onion,%20a%20few%20cloves%20of%20garlic,%20and%20a%20couple%20of%20carrots.%20%20Rough%20chop%20them%20all%20and%20toss%20in%20with%20the%20bones.%20%20No%20need%20to%20peel%20or%20remove%20leaves,%20just%20scrub%20the%20dirt%20off%20and%20toss%20them%20in.%20%20You%E2%80%99ll%20be%20straining%20out%20the%20solids.%20%20Cover%20everything%20with%20water%20almost%20to%20the%20top%20of%20the%20crock,%20and%20cook%20on%20high%20for%204-5%20hours%20or%20low%20from%208-10.%3C/p%3E%3Cp%3EOnce%20your%20stock%20is%20a%20rich%20golden%20color,%20you%E2%80%99ll%20turn%20off%20the%20crock,%20allow%20to%20cool%20a%20while%20(because%20it%20is%20EASY%20to%20burn%20yourself%20with%20this),%20then%20use%20a%20slotted%20spoon%20to%20scoop%20out%20the%20biggest%20bits%20of%20vegetable%20and%20bone.%20%20Discard.%20%20When%20the%20stock%20itself%20is%20cool%20enough%20to%20pour%20without%20burning%20yourself,%20place%20a%20colander%20over%20a%20large%20stock%20pot%20or%20dutch%20oven%20(whatever%20you%E2%80%99ve%20got%20that%20has%20enough%20room),%20and%20carefully%20pour%20the%20stock%20in.%20%20Discard%20whatever%20gets%20caught%20in%20the%20colander.%20%20Refrigerate%20stock,%20checking%20after%20a%20few%20hours%20to%20skim%20any%20congealed%20fat%20from%20the%20top%20of%20the%20pot.%20%20You%20might%20have%20to%20do%20this%20a%20couple%20of%20times.%20%20In%20the%20end%20you%20will%20have%20a%20couple%20of%20quarts%20of%20rich,%20homemade%20stock%20to%20use%20for%20your%20dressin%E2%80%99,%20gravy,%20and%20any%20other%20holiday%20dishes.%20%20%20I%20swear,%20once%20you%E2%80%99ve%20had%20your%20own%20stock,%20you%20won%E2%80%99t%20be%20able%20to%20go%20back%20to%20that%20pale,%20flavorless%20stuff%20in%20a%20box.%20%20When%20I%20make%20this%20normally,%20I%20freeze%20the%20stock%20in%20ice%20cube%20trays%20(1%20cup%20of%20stock%20makes%2010%20cubes)%20and%20keep%20in%20a%20giant%20freezer%20bag.%3C/p%3E%3Cp%3ENow,%20I%20just%20have%20to%20decide%20what%20to%20do%20with%20butternut%20squash,%20mushrooms,%20spicy%20andouille%20sausage,%20bread%20dough,%20and%20several%20varieties%20of%20cheese.%20%20More%20to%20come.%3C/p%3E){kind=link}
