Ingredients

  • 1/4 c. vegetable oil
  • 1/4 c. lemon juice
  • 1/4 c. Parmesan cheese, freshly grated
  • 1 tsp oregano
  • 4 tsp salt
  • 1 tsp pepper
  • 2 x chicken broiler-fryers, halved
  • 2 tsp Parmesan cheese, freshly grated
  • 1 c. flour
  • 4 tsp paprika
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1/2 c. butter

Directions

  1. Combine oil, lemon juice, cheese, oregano, 2 tsp. salt and 1 tsp. pepper. Beat well. Pour over chicken halves. Cover and chill for 2 hrs. Combine remaining ingredients, except butter. Remove chicken from marinade; roll in flour mix. Saute/fry chicken in butter till brown.
  2. Place chicken in center of a double thick square of aluminum foil. Bring up sides and ends; fold tightly. Place on baking sheet and bake at 425 degrees for 1 hour.
