- Ingredients:
- 2 cups all-purpose flour
- 3/4 cup unsweetened dark cocoa powder (not Dutch process)
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 sticks unsalted goat butter, softened
- 1 1/4 cups sugar (I used a little bit less)
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 1/4 cups dry red wine

%20Miss.%20Kate's%20favorite%20things:%20Michigan%20cherries,%20(Michigan)%20red%20wine%20and%20dark%20chocolate.%20It%20doesn't%20hurt%20that%20it's%20utterly%20delicious%20and%20one%20of%20my%20favorite%20cakes%20that%20I've%20made!%3C/p%3E%3Cp%3EAnything%20that%20has%20a%20tight%20but%20moist%20crumb,%20chocolate%20and%20is%20easy%20to%20decorate%20is%20a%20win%20in%20my%20book.%20I%20also%20can't%20discredit%20the%20fact%20that%20it's%20relatively%20low%20sugar%20and%20incorporates%20fresh%20fruit!%20So%20while%20the%20cherries%20are%20still%20blooming%20and%20the%20temperatures%20are%20mild,%20make%20someone%20you%20know%20a%20Kate%20Cake!%20They%20won't%20hate%20you%20for%20it.%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%C2%B0.%20Butter%20and%20flour%20a%2012-cup%20bundt%20pan.%20In%20a%20bowl,%20whisk%20the%20flour,%20cocoa%20powder,%20baking%20soda%20and%20salt.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20using%20a%20handheld%20electric%20mixer,%20beat%20the%20butter%20with%20the%20sugar%20at%20medium-high%20speed%20until%20fluffy,%204%20minutes.%20Add%20the%20eggs,%20one%20at%20a%20time,%20and%20beat%20until%20incorporated.%20Add%20the%20vanilla%20and%20beat%20for%202%20minutes%20longer.%20Working%20in%20two%20batches,%20alternately%20fold%20in%20the%20dry%20ingredients%20and%20the%20wine,%20until%20just%20incorporated.%3C/p%3E%3Cp%3EScrape%20the%20batter%20into%20the%20prepared%20pan,%20and%20bake%20for%2045%20minutes,%20until%20a%20toothpick%20inserted%20in%20the%20center%20comes%20out%20clean.%20Let%20the%20cake%20cool%20in%20the%20pan%20for%2010%20minutes,%20then%20turn%20it%20out%20onto%20a%20rack;%20let%20cool%20completely.%20Top%20the%20cake%20with%20pitted%20and%20sliced%20cherries%20reduced%20in%20a%20small%20sauce%20pan%20with%20a%20little%20bit%20of%20water.%3C/p%3E){kind=link}
