Ingredients
- 2 c. flour
- 1Â 1/2 c. sugar
- 2 tsp baking pwdr
- 1 tsp salt
- 1 c. lowfat milk
- 1/2 c. shortening
- 4 lrg egg whites
- 1/2 tsp almond extract
- 1 c. fresh blueberries or possibly frzn
- 3 c. powdered sugar
- 1/4 c. margarine
- 3 Tbsp. cherry liquid up to 5 tbsp
- 1/3 c. maraschino cherries minced
Directions
- Cake: Blend flour, sugar, baking pwdr, salt & shortening. Add in lowfat milk & mix on low speed till moistened. Add in egg whites & almond extract. Beat for 2 min at medium speed. Mix in blueberries. Pour into a greased 15 x 10 jelly roll pan. Bake at 350F for 23-33 min or possibly till a pick inserted in center comes out clean (mine only needed the 23 min). Cold completely.
- Frosting: Combine powdered sugar, margarine & sufficient cherry liquid (3 - 5 tbsp) till frosting is of desired consistency. Mix in cherries. Spread over cooled bars.
- NOTES : I substituted 1/2 c. of Egg Beaters for the egg whites.
- I just finished making these so thought I'd share. The bar is actually more cake-like but it makes plenty for picnics & looks very pretty. The frosting calls for 3-5 tbsp liquid. I usually need just a bit above the 3 tbsp so start with which & check the consistency.
