Ingredients
- 5 slc bacon
- 1 med onion, minced
- 2 c. minced, peeled tomato
- 1 c. long-grain rice, uncooked
- 1 c. finely minced cooked ham
- 1/2 tsp salt
- 1/4 tsp grnd black pepper
- 1/8 tsp warm sauce
Directions
- Cook bacon in a large skillet till crisp; remove bacon, reserving 2 tbs drippings in skillet. Crumble bacon and set aside. Cook onion in drippings over medium-high heat, stirring constantly, till tender. Add in crumbled bacon, tomato, and remaining ingredients to skillet; cover and cook over low heat 10 min.
- Spoon mix into a lightly greased 1-qt baking dish. Cover and bake at 350 degrees F. for 1 hour, stirring every 15 min.
- Serves 6 to 8.
