Red and White Cauliflower Bake Recipe

Ingredients

  • 1 head cauliflower, chopped and steamed until crisp tender
  • Tofu mixture:
  • 1 block firm tofu, pressed and crumbled
  • 1 tablespoon lemon juice
  • 2 tablespoons nutritional yeast flakes
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground pepper
  • 2 teaspoons Italian seasoning
  • White Sauce:
  • 1/4 cup earth balance margarine
  • 1/4 cup flour
  • 1 tablespoon tahini
  • 1 tablespoon lemon juice
  • 1 cup almond milk
  • Red Sauce:
  • 1-14.5 oz can fire roasted tomatoes, blended
  • 4 cloves garlic
  • 1/2 tablespoon olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon vegetable better than boullion (or any vegetable broth powder/concentrate)
