WOW Bistro Chicken

I was debating what recipe to put up for the last post of this year. I could post a special recipe for a grand celebration or a lead-in to next year’s resolution, and everyone has got one, to lose some of the holiday weight that seems to be impossible to avoid. The weight lose won out. On our sister website, emealsforyou.com, we have a category called WOW ( Watching Our Waists) where we provide recipes for controlling our food intake and not giving up on all the flavor and satisfaction. Along with this category we provide Diet Friendly, a 4-week quide of meal plans. The secret to success is to maintain your nutritional balance throughout the day. Three meals and two snacks evenly spaced will accomplish this. Our affiliation with registered Dietitian Lisa M. Ronco, MS RD CDN, along with our Diet Friendly 4- week plan will help you get to your health goal. Would you like an entire weekly plan to control your weight and your life, geared to portion control and balanced meals. Our intent is to make it very easy to provide good, nutritional meal ideas; three per day, with two snacks during the day. All this plus shopping lists for these meals.

Wash and thoroughly dry the chicken. Place first 6 ingredients in a food processor and process until well mixed, add olive oil slowly. Spread evenly on chicken and refrigerate for at least 1 hour. Pre-heat oven to 350 degrees. Place chicken in a roasting pan, cut lemon in half and place alongside of chicken in pan. Place pan in the center of oven and roast for 18 minutes per pound, or until juices flow clear. Remove chicken when done and let stand for 20 minutes. Place chicken broth and the 1/4 zested lemon, cut in half, into a sauce pan and simmer for 20 minutes. Add broth to roasting pan and stir to deglaze. Return pan to heat on stovetop on low. De-grease, remove lemon (discard) and broth, remove 2 Tb of juice from pan,add cornstarch and stir, return this to roaster pan. Allow to thicken, carve chicken, pour a small amount of gravy over the chicken and serve the remainder on the side.

Each serving has 315 calories, 6.8g carbs, 16.7g fat, 34.2g protein and .9g fiber. Points Plus 8
