Ingredients

  • 6 x Chicken breasts, boiled and minced
  • 3 c. Chicken broth
  • 2 can Cream of mushroom soup
  • 1 1/2 c. Instant rice, uncooked
  • 1 ct (8-ounce) lowfat sour cream
  • 1 pkt Crackers
  • 1/2 stk butter or possibly oleo, melted

Directions

  1. Mix chicken, broth, soup, rice and lowfat sour cream all together. Pour into a casserole dish. Crumble crackers. Mix cracker crumbs with butter, sprinkle on top of casserole. Bake at 350 degrees for 30 min, uncovered.
