Ingredients
- 2 packages yeast (4 1/2 teaspoons), dissolved in 1 cup lukewarm water
- 6 tablespoons shortening (Crisco)
- 1 cup granulated sugar
- 9 cups unbleached all-purpose flour
- 2 cups hot water
- 2 eggs, beaten
- 1 tablespoon salt
- For the filling:
- 1/2 cup softened butter
- 1/2 cup light brown sugar
- 3 1/2 cups frozen raspberries
- 1/3 cup granulated sugar
- Zest of 1 large lemon
- 1 1/2 teaspoons cornstarch
- For the frosting:
- 4 ounces cream cheese, at room temperature
- 1/4 cup unsalted butter, at room temperature
- 1 cup powdered sugar
- 1 teaspoon lemon zest

%3C/p%3E%3Cp%3EWe%20used%20my%20dad%E2%80%99s%20recipe%20for%20the%20base%20of%20the%20rolls%20because%20it%20is%20PERFECTION!%20You%20will%20never%20eat%20a%20softer,%20fluffier,%20melt%20in%20your%20mouth%20sweet%20roll.%20The%20dough%20is%20like%20satin.%3C/p%3E%3Cp%3ETo%20mix%20things%20up,%20we%20added%20raspberries%20to%20the%20filling.%20We%20used%20frozen%20raspberries%20because%20they%20hold%20together%20better.%20The%20raspberries%20will%20still%20get%20juicy%20and%20ooze%20out%20a%20little,%20but%20that%20is%20ok.%20They%20make%20a%20pretty%20mess:)%3C/p%3E%3Cp%3EWe%20topped%20the%20raspberry%20sweet%20rolls%20with%20a%20generous%20amount%20of%20cream%20cheese%20frosting.%20I%20added%20a%20little%20lemon%20zest%20to%20brighten%20up%20the%20rolls.%3C/p%3E%3Cp%3EThe%20raspberry%20sweet%20rolls%20were%20heavenly!%20I%20loved%20the%20fruity%20raspberry%20filling.%20And%20my%20dad,%20the%20cinnamon%20roll%20master,%20approved%20too!%3C/p%3E%3Cp%3EMy%20dad%20is%20coming%20to%20visit%20us%20for%20Christmas%20and%20I%20know%20he%20will%20be%20making%20his%20famous%20cinnamon%20rolls%20for%20Christmas%20brunch.%20It%20is%20a%20family%20tradition.%20I%20am%20going%20to%20put%20in%20a%20request%20for%20Raspberry%20Sweet%20Rolls%20too.%20They%20are%20the%20perfect%20Christmas%20morning%20treat!%20The%20raspberries%20make%20them%20so%20pretty%20and%20festive%E2%80%A6and%20it%20is%20the%20holidays.%20It%20is%20ok%20to%20indulge.%20I%20am%20going%20to%20eat%20a%20cinnamon%20roll%20and%20raspberry%20sweet%20roll.%20Merry%20Christmas%20to%20me:)%3C/p%3E%3Cp%3EAdd%20these%20Raspberry%20Sweet%20Rolls%20to%20your%20Christmas%20brunch%20menu.%20Your%20friends%20and%20family%20will%20love%20them!%20Enjoy!%3C/p%3E%3Cp%3ERaspberry%20Sweet%20Rolls%3C/p%3E%3Cp%3EYield:%20Makes%2024-30%20rolls%3C/p%3E%3Cp%3ECook%20Time:%2017%20minutes%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EFor%20the%20dough:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Add%20yeast%20to%201%20cup%20of%20lukewarm%20water.%20Stir%20with%20a%20spoon%20and%20set%20aside%20for%20about%20five%20minutes.%3C/p%3E%3Cp%3E2.%20In%20the%20bowl%20of%20a%20stand%20mixer,%20add%20shortening,%20sugar,%20and%20salt%20to%20hot%20water%20and%20beat%20for%2030%20seconds.%20Let%20cool%20to%20lukewarm%20temperature.%20Stir%20in%202%20cups%20of%20flour%20and%20mix%20until%20smooth.%20Add%20yeast%20mixture%20and%20mix%20until%20well%20combined.%20Mix%20in%20the%20beaten%20eggs.%3C/p%3E%3Cp%3E3.%20Gradually%20stir%20in%20the%20remaining%20flour%20and%20mix%20with%20the%20dough%20hook%20for%20about%202%20minutes.%20Remove%20dough%20from%20the%20bowl%20and%20place%20on%20a%20lightly%20floured%20counter.%20Knead%20by%20hand,%20add%20a%20little%20flour%20if%20the%20dough%20is%20still%20sticky.%20Knead%20until%20dough%20feels%20satiny%20and%20smooth.%3C/p%3E%3Cp%3E4.%20Put%20the%20dough%20in%20a%20greased%20bowl%20and%20cover%20with%20a%20towel.%20Let%20rise%20for%2030%20minutes%20or%20until%20dough%20doubles%20in%20size.%3C/p%3E%3Cp%3E5.%20Remove%20dough%20from%20bowl%20and%20place%20on%20a%20lightly%20floured%20counter.%20Divide%20dough%20in%20half.%20With%20a%20rolling%20pin,%20roll%20one%20half%20of%20the%20dough%20into%20a%20rectangular%20shape.%20Spread%20dough%20evenly%20with%204%20tablespoons%20of%20softened%20butter.%20Sprinkle%20dough%20with%201/4%20cup%20brown%20sugar.%20In%20a%20medium%20bowl,%20carefully%20stir%20together%20the%20frozen%20raspberries,%20granulated%20sugar,%20lemon%20zest,%20and%20cornstarch.%20Sprinkle%20half%20of%20the%20raspberry%20mixture%20over%20the%20dough.%3C/p%3E%3Cp%3E6.%20Gently%20roll%20up%20dough%20into%20one%20long%20roll.%20Cut%20rolls,%20using%20a%20piece%20of%20dental%20floss%20or%20thread,%20about%20two%20inches%20thick.%20Place%20rolls%20into%20a%20greased%209X13%20baking%20pan.%3C/p%3E%3Cp%3E7.%20Now%20follow%20the%20exact%20same%20steps%20with%20the%20other%20half%20of%20the%20dough,%20using%20the%20remaining%20ingredients.%3C/p%3E%3Cp%3E8.%20Place%20rolls%20in%20a%20warm%20spot%20and%20cover%20with%20a%20towel.%20Let%20rolls%20rise%20until%20double%20in%20bulk,%20about%20an%20hour.%20Bake%20rolls%20at%20425%20degrees%20F%20for%2010%20minutes.%20Reduce%20temperature%20to%20350%20degrees%20F%20and%20bake%20for%205-7%20more%20minutes%20or%20until%20golden%20brown.%20Remove%20pans%20from%20oven%20and%20let%20cool%20on%20a%20wire%20rack.%3C/p%3E%3Cp%3E9.%20While%20the%20rolls%20are%20cooling,%20make%20the%20frosting.%20In%20a%20medium%20bowl,%20combine%20cream%20cheese,%20butter,%20powdered%20sugar,%20and%20lemon%20zest.%20Using%20electric%20mixer,%20beat%20until%20smooth.%20Spread%20frosting%20on%20rolls%20and%20serve.%3C/p%3E%3Cp%3EYum%3C/p%3E){kind=link}
