Radish Pickles (Overnight Chinese Daikon)

Ingredients

  • 1 1/2 c. minced daikon
  • 3/4 tsp salt
  • 1 Tbsp. rice vinegar
  • 1/4 tsp grnd black pepper
  • 1/4 tsp sesame oil (optional)

Directions

  1. In a mixing bowl, toss daikon with salt. Cover, and chill till 1 to 2 Tbsp. of water is released, about 30 min. Drain and rinse daikon, removing as much salt as possible. Pat dry with a paper towel, and return to bowl. Stir in rice vinegar, black pepper and, if you like, sesame oil. Cover, and chill at least 8 hrs.
