Ingredients

  • 1/2 c. Quinoa
  • 1 c. Water
  • 2 Tbsp. Red and yellow bell pepper, finely minced
  • 1/4 tsp Freshly grnd black pepper
  • 1/4 tsp Garlic, chopped
  • 1 tsp Parsley, minced
  • 1 pch Kosher salt

Directions

  1. Ede wanted a quinoa recipe. This is a recipe which I got in a cooking class I took at the Disney Institute in Orlando. It was a healthy cooking class where we learned and cooked a few things. This was delicious and very easy to make! "Quinoa (pronounced keen-wa) is a complete protein. It provides an essential amino acid balance close to the ideal needed in our diets. Quinoa contains more high quality protein than any other grain."
  2. Place quinoa in a strainer and run water over the grain to remove the excess starch. Place in 1 qt sauce pan with the water, and place over medium high heat till a simmer is reached. Reduce heat and maintain the simmer.
  3. When liquid is almost completely absorbed, add in the garlic and peppers.
  4. Finish cooking till dry. Finish with the minced herbs and healthy pinch of salt.
