These are my new favorite snack/meal. I dipped them in pizza sauce, but I may be using this recipe as a basic starting recipe to try other flavors and ingredients for these tasty little bites.
Ingredients
- 2 cups cooked quinoa
- 2 large eggs
- 1 cup chopped onion
- 1 cup shredded mozzarella cheese
- 1 oz shredded or grated parmesan
- 2 tsp minced garlic
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp paprika
- 1 tsp dried crushed oregano
Directions
- Preheat oven to 350 degrees.
- Mix together all ingredients in a medium mixing bowl.
- Distribute mixture into a greased mini muffin tin, filling each cup to the top (1 heaping Tbs each), and press down gently to compact.
- Bake for 20 minutes.
- Makes 32 bites.
