  • 1 cup of uncooked rice
  • 1 pint of grape tomatoes – halved
  • 3 bunches scallions – chopped
  • 1 head of garlic – crushed & chopped
  • 1 bell pepper – chopped
  • 1 bunch of cilantro – chopped
  • 1 Jalapeño – chopped with seeds
  • 1 29oz. can of black beans - rinsed & drained
  • Olive oil – for drizzling
  • Seasoning Mix:
  • 1 tablespoon – LivingtheGourmet Spice Rub
  • 1 tsp. – cumin
  • 1 tsp. brown sugar
  • Juice of 1 lime

Directions

  1. Prepare the rice as directed.
  2. Heat a large frying pan with a few drizzles of olive oil. Add the tomatoes, scallions, garlic, bell pepper, cilantro and Jalapeño. Sauté for a minute or two or until the garlic is fragrant.
  3. Add the cooked rice to the sautéed veggies and toss. Add the beans, toss and continue to cook on low until everything is evenly heated.
  4. Combine the ingredients for the seasoning. Add to the rice and beans and again toss.
