Ingredients
- 1 1/2 c. minced toasted pecans, divided
- 1 c. graham cracker crumbs
- 1/3 c. butter, melted
- 1/2 c. sugar
- 1/2 c. water
- 1 (6 ounce) pkg. (1 c.) Nestle butterscotch flavored morsels
- 2 large eggs
- 1/2 teaspoon salt
- 1/8 teaspoon nutmeg
- 1 3/4 c. heavy cream, whipped
Directions
- In bowl, put together 1/2 cup pecans, graham cracker crumbs and butter; mix well. Press crumb mix into 9-inch pie plate; set aside.
- In saucepan, put together sugar and water. Bring to boil over medium heat; boil 3 min. Remove from heat. In blender container, put together Nestle butterscotch flavored morsels and sugar mix. Cover; blend at high speed 30 seconds. Add in large eggs, salt and nutmeg. Cover; blend at high speed 1 minute. Cool to room temperature.Fold into whipped cream. Spoon 1/2 of filling into crust. Sprinkle 1/2 cup pecans on top. Spoon remaining filling on top. Garnish with remaining pecans. Freeze till hard. Makes 1 (9-inch) pie.
