Quick Apple Topped Pancake Recipe

I have tried this recipe many ways. Once I made the pancake from scratch and added the apple. But when I am in a hurry, I simply use a pancake mix (usually use Aunt Jemina) and then do the rest of the fun stuff. In the following recipe, Apple Topping is enogh for 6 pancakes

Ingredients

  • Any butter milk pancake mix (I normally use the Whole wheat pancake mix)
  • 2 small green apples (Granny Smith) peeled, cored and cut into thin slices
  • 1 ½ tablespoons butter
  • ¼ teaspoon cinnamon
  • 1 tablespoons brown sugar

Directions

  1. To make the topping:
  2. In a skillet melt butter and add apples, cinnamon and sugar
  3. Reduce heat to medium and stir continuously and cook for about 2 – 3 minutes or until the apples are soft
  4. Keep aside
  5. Make pancakes according to package directions (make the batter for about 6 pancakes)
  6. Add a little bit of butter on a skillet and add a spoonful of batter to the skillet
  7. Immediately add a couple of apple slices on top of the pancake and cook until nice and brown on bottom
  8. Flip pancake and cook until nice and brown
