Ingredients

  • 300 gm puy lentils
  • 3 Tbsp. extra virgin extra virgin olive oil
  • 1 x juice of 1 large lemon
  • 3 x roasted red/yellow peppers peeled and minced
  • 4 Tbsp. freshly minced parsley

Directions

  1. Cook the lentils according to packet instructions usually for 15 to 20 min then drain well. While still hot toss in oil and lemon juice adding salt and pepper to taste.
  2. Leave to cold then stir in the peppers and parsley.
  3. Check seasoning and serve at room temperature.
