Ingredients

  • 1 can Pure pumpkin, (15-oz)
  • 3/4 c. Pure maple syrup
  • 3/4 c. Whipping cream
  • 3 lrg Large eggs
  • 2 Tbsp. Unsalted butter, melted (1/4 stick)
  • 1 tsp Grnd cinnamon
  • 1/2 tsp Grnd nutmeg
  • 1/4 tsp Grnd cloves
  • 1/4 tsp Salt
  • 1 x Flaky Pie Crust
  • 1 c. Chilled whipping cream
  • 3 Tbsp. Powdered sugar
  • 1 tsp Grnd cinnamon
  • 1 tsp Vanilla extract

Directions

  1. For pie: Position rack in bottom third of oven and preheat oven to 350 F. Whisk pumpkin, maple syrup, whipping cream, Large eggs, butter, cinnamon, nutmeg, cloves and salt in large bowl to blend well.
  2. Pour pumpkin mix into prepared pie crust. Bake till filling is just set in center and crust is golden brown, about 1 hour. Transfer pie to rack and cold completely. Cover pie and chill till cool. (Can be prepared 1 day ahead. Keep refrigerated.)
  3. For whipped cream: Using electric mixer, beat 1 c. chilled whipping cream, 3 Tbsp. powdered sugar, 1 tsp. grnd cinnamon and 1 tsp. vanilla extract in large bowl till soft peaks form.
  4. Serve pie cool or possibly at room temperature with whipped cream.
  5. Makes 8 servings.
