Pumpkin Oatmeal Cookies

Chewy, nutty, spicy and soft - cookies to serve holiday company or take to share at work or meetings. Change ingredients out to your liking - use raisins or Craisins; walnuts or pecans; all-purpose or white whole wheat flour; and brown sugar blend or other combination of baking sweetener in place of, or part of the sugar. Have it YOUR way!

Ingredients

  • 2 cups flour
  • 1 cup oatmeal
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/4 teaspoon cloves
  • 1 cup butter (2 sticks), softened
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 egg
  • 1 cup pumpkin
  • 1 teaspoon vanilla extract
  • 1 cup raisins or dried cranberries
  • 3/4 cup chopped walnuts

Directions

  1. Preheat oven to 350 degrees F.
  2. Combine flour, oatmeal, baking soda, salt, cinnamon, allspice and cloves.
  3. In large mixing bowl beat together butter with brown and white sugars. Add egg, pumpkin and vanilla, mixing well. Stir in raisins and nuts.
  4. Drop by rounded tablespoons onto lightly greased baking sheets. Bake 15 to 20 minutes, or until cookies are golden brown and middle is set. Remove from oven; cool slightly then remove from pan to wire rack to cool completely. Store flat without stacking to preserve shape best.
  5. Yield: 4 dozen large cookies
