Pumpkin Chocolate Chip Muffins Recipe

My son made this with his second grade class last week. They had a great time and the muffins came out yummy!

Directions

  1. Stir all dry ingredients together in a large bowl.
  2. Mix water, eggs, oil and pumpkin in a separate bowl.
  3. Make a well in the center of dry ingredients and add wet ingredients. Mix well.
  4. Stir in chocolate chips and pour into line muffin tins.
  5. Bake at 375 degrees for 18 minutes.
  6. To make loaves instead of muffins, pour batter into 2 greased loaf pans and bake for 1 hour at 350 degrees.

    They are delicious and the spices are not overpowering. My son loved it so much, I had to bake another batch. They also taste great without the chocolate chips, too.

      Made the loaf/cake version in a single 10.5" x 14.75" pan and it turned out perfect (exactly 1 hour @350). Because the batter is runny, I suggest sprinkling the chips around after pouring in the pan -- otherwise, they clump up. It was moist and delicious.
