this is not a fried rice.....but a special kind of rice made with prawns.

Ingredients

  • 1/2 kg of Biriyani rice.......cook it with a little salt.....should be a little grainy and keep it aside to cool.
  • 1/2 kg of medium sized prawns shelled and cleaned. The prawns should not have any water in it.
  • If the prawns are very big they can be cut into 2 or 3 pieces.
  • 4 tbsp of thinly slice garlic
  • 2 tbsp of coarsely ground pepper
  • 6 to 8 green chillies slit
  • Juice of 2 limes
  • 1 tsp of turmeric powder
  • 1/4 cup of oil ....2 tbsp of ghee optional.
  • Coriander leaves for garnish.

Directions

  1. Place a kadai or a deep pan on the gas. Pour the oil and when it is hot put in the garlic, let it brown very slightly, add the chillies and fry for 1 min, add the pepper powder, turmeric, a little salt and the prawns and fry till the prawns are cooked. Keep the fire on slow and add the cooled rice a little at a time....until all the rice is mixed with the prawns. Switch off the gas and add the lime juice and stir it nicely. Let it rest covered for 5 mins.
  2. Garnish with coriander leaves and serve.
