Prairie Treat Pie Recipe

Also known as Saskatoon pie...it's awesome flavor is
hard to beat. Blueberries or any other berry can be
substituted.

Ingredients

  • 4 cups Saskatoon berries
  • 2 tbsp. water
  • 1 tbsp. lemon juice
  • 1 tsp. lemon zest
  • 1 cup sugar
  • 1 tbsp. instant tapioca
  • 1 tbsp. butter
  • Pastry for a double crust ( 9" pie )

Directions

  1. Preheat oven to 425 F.
  2. Wash the berries & place in a saucepan
  3. Add water, juice & zest
  4. Simmer about 10 min. ( do not boil )
  5. Add sugar & tapioca & allow to cool.
  6. Pour into pastry-lined pie plate, add butter
  7. Cover with a top crust, seal edges
  8. Brush top with milk & sprinkle with sugar
  9. Bake for 15 min., then lower heat to 350 F.
  10. Bake for another 30 min.
  11. Cool , top with whipped cream
