Potatoes au Gratin Recipe

Ingredients

  • 4 large Russet potatoes, peeled
  • 1 1/2 cups organic heavy cream (buy pasture-raised if you can - Organic Valley is a good bet if you don't have a local source)
  • 1/4-1/2 cup freshly grated Parmesan cheese
  • 1 tsp sea salt
  • 1/4 tsp freshly ground white pepper (if you have it)
  • 1 clove of garlic, peeled and cut in half
  • Butter to grease the gratin dish
  • Several branches of fresh thyme, washed
