.%3C/p%3E%3Cp%3EI%20on%20the%20other%20hand%20found%20them%20dangerously%20addictive,%20like%20shortbread%20plus%20potato%20chips%20and%20yet%20much%20better%20than%20that%20sounds.%20And%20if%20I%20was%20feeling%20insecure%20at%20all%20after%20John%E2%80%99s%20rejection%20(although%20truly%20he%20was%20nice%20about%20it),%20I%20felt%20a%20lot%20better%20after%20a%20friend%20of%20mine%20told%20me%20that%20her%20older%20son%E2%80%99s%20teacher%20had%20gushed%20to%20her%20about%20these%20amazing%20potato%20chip%20cookies,%20and%20how%20she%20had%20sneaked%20out%20at%20every%20possible%20break,%20hoping%20there%20would%20still%20be%20more%20left.%3C/p%3E%3Cp%3ESo%20I%20guess%20some%20people%20love%20them!%3C/p%3E%3Cp%3EThe%20recipe%20did%20not%20contain%20any%20guidelines%20about%20what%20kind%20of%20potato%20chips%20to%20use,%20so%20I%20went%20with%20our%20standby,%20Cape%20Cod%20Reduced%20Fat%20Kettle%20Cooked%20chips.%20The%20reduction%20in%20fat%20comes%20from%20the%20baking/frying%20method,%20not%20any%20weird%20additives.%20I%20do%20find%20them%20less%20salty%20than%20other%20chips%20though%20so%20I%20added%20a%20bit%20of%20coarse%20salt%20to%20the%20dough.%20I%20think%20I%20was%20a%20tad%20overzealous%20in%20my%20rolling%20of%20the%20cookie%20dough%20in%20potato%20chips,%20as%20I%20used%20a%20ton%20more%20than%20Krystina%20Castella%20called%20for.%20Of%20course%20one%20person%E2%80%99s%20overzealous%20is%20another%20person%E2%80%99s%20perfect,%20so%20just%20roll%20to%20taste.%3C/p%3E%3Cp%3EPotato%20Chip%20Cookies%3C/p%3E%3Cp%3EClosely%20adapted%20from%20Crazy%20About%20Cookies,%20Kristina%20Castella%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20325%20F.%20Line%202%20cookie%20sheets%20with%20parchment%20or%20silicone.%20Set%20aside.%3C/p%3E%3Cp%3EBeat%20the%20butter%20and%20sugar%20until%20fluffy%20(add%20the%20salt%20here%20if%20using).%20Mix%20in%20the%20vanilla,%20and%20then%20the%20flour%20and%201%20cup%20of%20the%20potato%20chips.%20Mix%20well%20to%20thoroughly%20incorporate%20the%20chips%20but%20do%20not%20overmix.%3C/p%3E%3Cp%3EUsing%20a%20cookie%20scoop%20or%20spoons,%20shape%20the%20dough%20into%201%20inch%20balls%20and%20then%20roll%20them%20in%20the%20remaining%20crushed%20potato%20chips.%20Place%20on%20the%20cookie%20sheet%20about%202%201/2%20inches%20apart%20(%20ibaked%2012%20cookies%20to%20a%20sheet).%20Press%20on%20the%20cookie%20balls%20slightly%20to%20flatten%20just%20a%20bit.%20Sprinkle%20them%20with%20coarse%20salt%20and/or%20sugar,%20to%20your%20taste%20(I%20liked%20both).%3C/p%3E%3Cp%3EBake%20for%2012-15%20minutes;%20the%20cookies%20will%20not%20get%20particularly%20dark,%20just%20lightly%20browned.%20Let%20cool%20on%20the%20cookie%20sheets%20for%205%20minutes%20before%20moving%20to%20a%20cooling%20rack%20to%20cool%20completely.%3C/p%3E){kind=link}
