This candy was made at Chirstmas by one of my favorite aunts... I looked forward to going to her house during the holidays because I knew I was going to be able to have some of this wonderful concoction!!! The key to the recipe is to use a small amout of potato...Instant pototos can be substituted for a baked potato. Enjoy!!!

Directions

  1. Cream the potato and salt together slowly add the powdered sugar until a dough forms.
  2. Roll dough out to 1/8 inch thick...(I roll the dough out on top of waxed paper to help in the roll up step)
  3. spread with peanut butter
  4. Roll up in a jelly roll fashion
  5. Store in a cool place until firm
  6. Slice in thin slices
  7. Store in a cool place and keep covered with foil
