Directions

  1. Put broccoli, celery, onion, potatoes and carrots into large saucepan. Use sufficient water to cover tops. Boil over medium heat till potatoes are done, stirring occasionally.
  2. While this is boiling, heat butter in a large saucepan. Stir in flour. Keep stirring till mix is smooth and bubbly. Stir in 2 1/2 c. water. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in potato mix. Add in salt and pepper. Heat and serve. 8 servings.
