Ingredients
- 1 lb new potatoes quartered
- 1 lb green beans trimmed and halved crosswise
- 1 x red bell pepper seeded and minced
- 4 x scallions minced
- 1/2 c. buttermilk
- 1/4 c. light lowfat sour cream
- 1/4 c. nonfat mayonnaise
- 1 tsp fresh lemon juice
- 1/4 tsp garlic pwdr
- 1/4 tsp salt
- 1/4 tsp freshly grnd pepper
Directions
- Combine the potatoes and sufficient water to cover in a large saucepan. Bring to a boil and cook 6 min. Add in the green beans and cook till the beans are tender, about 3 min. Drain and rinse with cool water.
- Combine the bell pepper, scallions, buttermilk, lowfat sour cream, mayonnaise, lemon juice, garlic pwdr, salt and pepper in a large bowl. Add in the potatoes and green beans; toss well to combine.
