Directions

  1. Combine the potatoes and sufficient water to cover in a large saucepan. Bring to a boil and cook 6 min. Add in the green beans and cook till the beans are tender, about 3 min. Drain and rinse with cool water.
  2. Combine the bell pepper, scallions, buttermilk, lowfat sour cream, mayonnaise, lemon juice, garlic pwdr, salt and pepper in a large bowl. Add in the potatoes and green beans; toss well to combine.
