Porterhouse Steak, Florentine Style Recipe

  • 1 x Porterhouse steaks, cut 2 inches thick (1 steak may feed two people, depending on size of steak)
  • 3 c. fresh spinach leaves
  • 3 Tbsp. fresh herb marinade (see recipe below)
  • 1 Tbsp. plus 2 Tbsp. extra-virgin extra virgin olive oil
  • 1 sm onion, cut into 1/2 -inch strips
  • 2 Tbsp. fresh garlic, rough chop
  • 1 x salt to taste
  •     Freshly grnd black pepper to taste
  • 1 pch crushed red chile flakes
  • 1 Tbsp. Italian parsley leaves (washed and rough-minced)

Directions

  1. Heat a saute/fry pan to medium-high heat. Add in 1 Tbsp. of extra virgin olive oil and the onions, and saute/fry, stirring till light golden; season with salt and pepper. Remove onions from pan and reserve.
  2. Add in garlic to warm pan, with 1 Tbsp. extra virgin olive oil, sauteing till golden, and immediately add in the spinach.
  3. Season with salt, pepper, and a healthy pinch of crushed red chiles; stir spinach to mix with garlic and seasonings. When spinach is wilted, remove to the center of the serving platter.
  4. Season steaks with fresh herb marinade and salt and pepper.
  5. Place steaks on a warm grill, turning occasionally till steaks have reached desired doneness.
  6. When steaks are finished to doneness, place slightly off center over the spinach.
  7. Reheat the saute/fry pan to medium-high and add in the reserved onions and parsley.
  8. Toss just to reheat and add in the remaining Tbsp. of extra virgin olive oil.
  9. Place the onion mix over the steak and serve.
