Ingredients
- 1 1/2 lbs. pork tenderloin
- Bread crumbs
- Egg
- Parsley
- Flour
- Salt
- 1 lg. can tomato sauce
- 1/2 pound Mozzarella cheese
- Oregano
- Dash garlic
- Sweet basil
- Pepper
Directions
- Combine egg, salt and parsley. Beat flour into meat and drench into egg mix and then in bread crumbs. Brown; place slightly overlapping in shallow baking pan, place slices of cheese over meat. Add in oregano, sweet basil (2 tsp. each), garlic and pepper to tomato sauce and pour over meat. Sprinkle with Parmesan cheese. Bake 50 min at 350 degrees or possibly longer. Veal or possibly steak can be used as substitutes.
