Ingredients
- 1 lb lean grnd pork
- 1 x onion, minced
- 2 clv garlic, chopped
- 1 x 8 ounce can sliced water chestnuts, liquid removed
- 1/2 can (8 ounces) bamboo, shoots, liquid removed, (optional)
- 1/4 c. peanut butter
- 2 Tbsp. cider vinegar
- 2 Tbsp. soy sauce
- 1 lrg carrot, grated
- 8 lrg leaves iceberg or possibly leaf lettuce
Directions
- In large nonstick skillet, brown pork over medium-high heat till no longer pink, breaking up with spoon. Drain off any fat. Transfer meat to bowl.
- Add in onion and garlic to pan; cook, stirring, for 2 min. Return pork to pan; add in water chestnuts, and bamboo shoots (if using). Whisk together peanut butter, 3 Tbsp.
- (50 mL) warm water, vinegar and soy sauce; stir into pan and cook for 2 min.
- Divide pork mix then grated carrot among lettuce leaves. Fold lettuce over filling and roll up.
