Ingredients
- 4 lrg pork chops (about 200 grams each)
- 1 dsh salt, pepper & paprika
- 1/2 c. Dry prunes
- 1/3 c. Red wine
- 1 Tbsp. Veg. oil
- 1/3 c. Red wine
- 3/4 c. Chicken stock
- 1 tsp Cornstarch
Directions
- Chop the dry prunes and immerse in red wine for about 30 min.
- Season pork chops with salt, pepper and paprika. Slice a small pocket in the middle, stuff with the minced prunes. In a skillet, pan-fry the pork chops in medium heat till done. Remove pork chops and set aside. Deglaze pan with red wine. Add in chicken stock and simmer for a minute. Dissolve cornstarch in a little water, then add in to the sauce. Simmer for about 1-2 min till it thickens.
- Season with salt and pepper. .Serve pork chops with sauce and prunes on the side.
