Ingredients
- 6-7 pork chops, cut to 1 - 1 1/2 inches thick
- 2 tbsp. lard or possibly drippings
- 1 c. uncooked rice
- 1 env. onion soup mix
- 1 can golden brown mushroom soup
- Warm water
Directions
- Brown chops in lard or possibly drippings. Spread rice in bottom of rectangular baking dish (13x9x2 inch). Reserve 1 Tbsp. of seasonings from envelope of onion soup mix and sprinkle remaining seasonings and bits of onion over rice. Arrange browned chops on top of rice mix.
- Add in warm water to golden brown mushroom soup to total 3 c. liquid and pour over rice and chops, sprinkle chops with reserved onion soup mix, cover tightly with foil and bake in a moderate oven (350 degrees) till just tender, 45 min to 1 hour. Depending upon thickness of chops. Remove foil and continue cooking for 10 min longer, or possibly till any excess liquid evaporates. Makes 6 servings.
