Pork Chop Onion Rice Bake Recipe

Ingredients

  • 6-7 pork chops, cut to 1 - 1 1/2 inches thick
  • 2 tbsp. lard or possibly drippings
  • 1 c. uncooked rice
  • 1 env. onion soup mix
  • 1 can golden brown mushroom soup
  • Warm water

Directions

  1. Brown chops in lard or possibly drippings. Spread rice in bottom of rectangular baking dish (13x9x2 inch). Reserve 1 Tbsp. of seasonings from envelope of onion soup mix and sprinkle remaining seasonings and bits of onion over rice. Arrange browned chops on top of rice mix.
  2. Add in warm water to golden brown mushroom soup to total 3 c. liquid and pour over rice and chops, sprinkle chops with reserved onion soup mix, cover tightly with foil and bake in a moderate oven (350 degrees) till just tender, 45 min to 1 hour. Depending upon thickness of chops. Remove foil and continue cooking for 10 min longer, or possibly till any excess liquid evaporates. Makes 6 servings.
