  • 2 tbsp. oil
  • 6 cloves garlic, minced
  • 2 lbs. pork, stir-fry size
  • 1 pound onions, 1 inch chop
  • 10 roasted peppers, cleaned and minced
  • 1 can green chilies, minced
  • 1 (28 ounce.) canned tomatoes, chunk with hands, fresh tomatoes are better if available
  • Jalapenos, optional (to taste)
  • Cilantro, optional (to taste)
  • Cumin, optional (to taste)
  • Chili pwdr, optional (to taste)
  • Salt and pepper to taste
  • Shredded Cheddar

Directions

  1. Cook pork and onions with garlic till browned. Add in other ingredients. Cook about 2 hrs till pork is tender. Serve with macaroni if you like. Garnish with cheese.
