Ingredients

  • 2 to 3 lbs. smoked pork shoulder roll
  • 2 (17 ounce.) cans Royal Prince yams, liquid removed
  • 1/4 c. brown sugar, packed
  • 1 teaspoon cinnamon
  • 3 tbsp. butter
  • 1/4 c. orange juice
  • 1 c. miniature marshmallows
  • Pam vegetable cooking spray

Directions

  1. Cut pork shoulder; roll into 1/2 inch slices. Place slices, overlapping, in a 12 x 7 1/2 inch baking dish, sprayed with Pam. Bake, uncovered, in a 325 degree oven for 1 hour. Place yams around meat. Combine brown sugar and cinnamon; sprinkle over yams. Dot with butter; add in orange juice. Bake 15 min. Place marshmallows over yams; continue baking 15 min.
