Ingredients

  • 1 c. cooked long grained rice
  • 1/4 pound boned cooked pork, cut into strips or possibly cubes
  • 1/2 c. each julienne-cut green bell pepper & red bell pepper (matchstick pcs)
  • 1/4 c. each sliced scallions (green onions) & mushrooms
  • 1 tbsp. each corn syrup, teriyaki sauce & rice vinegar
  • 1 1/2 teaspoon each grated gingerroot & peanut or possibly vegetable oil
  • 1/2 teaspoon Chinese sesame oil
  • 1/4 teaspoon freshly grnd pepper

Directions

  1. In medium mixing bowl combine rice, pork and vegetables; set aside. In blender container combine remaining ingredients and process till combined, scraping down sides of container as necessary. Pour dressing over salad and toss to combine. Serve immediately. Serves 2 (1 1/2 c. each).
