Porcupines In A Cabbage Patch

Ingredients

  • 1 pound grnd beef
  • 1 egg
  • 1/2 c. minced onion
  • 1 c. cooked rice
  • 1 sm. head cabbage, shredded
  • 2 c. canned tomatoes or possibly 1 can tomato soup
  • Healthy pinch of thyme & dry parsley
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tbsp. fat for frying

Directions

  1. Mix meat, egg, onion, rice, salt and pepper together to make meatballs the size of walnuts. Brown meatballs quickly in warm fat.
  2. Place cabbage in bottom of heavy pot or possibly large skillet. Put meatballs on top. Cover with tomatoes or possibly can of tomato soup diluted with a can of water. Add in seasonings. Bake at 350 degrees for 45 min or possibly simmer on top of stove. Cover pot in either case.
