%20and%20a%20bar%20(Italian%20cafe)%20at%20which%20to%20have%20cornetti,%20cannoli%20and%20cappuccino%20every%20morning.%20I%20got%20prosciutto%20san%20daniele%20and%20salami%20from%20the%20grocery,%20cheese%20(a%20young%20pecorino)%20from%20the%20grocery,%20and%20seasonal%20fruits%20and%20veggies,%20as%20well%20as%20bread,%20from%20the%20fruttivendola%20(citrus,%20strawberries,%20cherries,%20tomatoes,%20etc).%20And%20every%20day%20that%20we%20are%20in%20Rende,%20this%20has%20formed%20our%20lunch.%3C/p%3E%3Cp%3EYum!%3C/p%3E%3Cp%3EBut%20let%E2%80%99s%20talk%20about%20what%E2%80%99s%20really%20important.%20Yes%20we%20have%20scoped%20out%20the%20best%20gelato%20and%20yes%20it%20is%20like%203%20steps%20from%20our%20apartment.%3C/p%3E%3Cp%3ESoon%20they%20will%20know%20us%20as%20well%20as%20the%20barista%20does!%3C/p%3E%3Cp%3EOne%20last%20bit%20of%20minutiae%20about%20where%20we%20are%20living:%20%E2%80%9Cwestern%E2%80%9D%20American%20food%20is%20quite%20the%20rage%20here!%20All%20of%20it%20cowboy%20themed!%20You%20can%20file%20that%20under%20things%20I%20was%20not%20expecting%20in%20Italy.%20Here%20is%20an%20example:%3C/p%3E%3Cp%3ENo%20we%20have%20not%20eaten%20there.%20Although%20I%20will%20not%20lie:%20the%20eating%20out%20choices%20are%20kinda%20slim%20here.%20Probably%20because%20the%20area%20is%20not%20wealthy%20and%20is%20student%20populated.%20We%20have%20been%20to%20a%20surprisingly%20tasty%20burger%20joint.%20And%20cooked%20dinner%20at%20home%20twice%20(post%20coming%20soonish).%3C/p%3E%3Cp%3EOK%20about%20this%20porchetta%20marinade.%3C/p%3E%3Cp%3EI%20found%20the%20marinade%20in%20Marinades:%20The%20Quick-Fix%20Way%20to%20Turn%20Everyday%20Food%20Into%20Exceptional%20Fare,%20with%20400%20Recipes%3C/p%3E%3Cp%3Eby%20Lucy%20Vasirfirer.%20This%20cookbook%20is%20the%20kind%20of%20quick%20fix%20miracle%20worker%20that%20I%20turn%20to%20when%20company%20is%20coming%20and%20I%20want%20to%20serve%20a%20hunk%20of%20meat%20instead%20of%20a%20one%20pot%20meal.%20I%20served%20this%20for%20that%20Italian%20themed%20meal%20I%20served%20to%20my%20family%20right%20before%20coming%20to%20Italy.%20When%20I%20served%20it%20to%20my%20family,%20it%20was%20as%20pork%20with%20asparagus%20and%20homemade%20bread.%20The%20next%20day%20however,%20I%20served%20it%20with%20a%20pasta%20dish%20that%20incorporated%20the%20leftover%20asparagus%20and%20morel%20mushrooms%20we%20found%20(stay%20tuned%20for%20recipe),%20so%20it%20is%20a%20versatile%20marinade.%3C/p%3E%3Cp%3ETraditional%20porchetta%20is%20an%20elaborate%20affair,%20involving%20gutting,%20deboning%20and%20stuffing%20a%20pig%20before%20rolling%20it%20and%20tying%20it!%20Someday%20I%20would%20love%20to%20eat%20it%E2%80%93but%20maybe%20not%20make%20it.%20Vasirfirer%20envisions%20this%20marinade%20for%20pork%20loin,%20but%20I%20took%20it%20a%20step%20easier%20still%20and%20used%20pork%20tenderloin,%20which%20of%20course%20also%20made%20it%20a%20healthier%20dish.%20Everything%20about%20this%20marinade%20expresses%20what%20I%20love%20most%20about%20Italian%20food%E2%80%93and%20wished%20I%20saw%20more%20of%20in%20American%20Italian%20restaurants.%20Lemon,%20loads%20of%20fresh%20herbs,%20some%20spices,%20copious%20olive%20oil,%20loads%20of%20garlic,%20and%20no%20pasta%20necessary.%3C/p%3E%3Cp%3ESwoon.%3C/p%3E%3Cp%3EPorchetta%20Marinade%20for%20Pork%20Tenderloin%20%20%20This%20recipe%20should%20be%20started%20the%20night%20before%20serving.%20Closely%20adapted%20from%20Lucy%20Vasirfirer.%20%20Ingredients%3C/p%3E%3Cp%3E7%20T%20extra%20virgin%20olive%20oil,%20divided%201%20t%20fennel%20seeds%20%C2%BD%20t%20black%20peppercorns%20zest%20of%201%20lemon%206-8%20garlic%20cloves,%20minced%202%20T%20minced%20fresh%20rosemary%202%20t%20minced%20fresh%20thyme%20%C2%BC%20t%20aleppo%20pepper%20(or%20hot%20red%20pepper%20flakes)%201%20t%20kosher%20salt%202%20pork%20tenderloins%20%20%20Instructions%3C/p%3E%3Cp%3EPlace%206%20tablespoons%20of%20extra%20virgin%20olive%20oil%20in%20a%20small%20bowl.%20Place%20the%20peppercorns%20into%20a%20small%20frying%20pan%20over%20medium%20heat.%20Shake%20the%20pan%20occasionally%20for%201-2%20minutes.%20Then%20add%20the%20fennel%20seeds.%20Shake%20and%20toast%20until%20the%20spices%20are%20fragrant--do%20not%20let%20them%20burn.%20It%20will%20take%20around%201%20minute.%20Scrape%20the%20toasted%20spices%20into%20a%20spice%20grinder.%20Grind%20until%20coarsely%20ground.%20Scrape%20the%20spices%20into%20the%20olive%20oil%20and%20then%20add%20the%20lemon%20zest,%20garlic,%20rosemary%20and%20thyme,%20aleppo%20pepper%20and%20salt.%20Whisk%20until%20everything%20is%20evenly%20incorporated.%20Trim%20the%20silver%20skin%20off%20of%20the%20pork%20tenderloin%20Place%20the%20marinade%20into%20a%20ziplock%20bag%20and%20add%20the%20trimmed%20pork%20tenderloin.%20Squeeze%20the%20air%20out%20of%20the%20bag%20and%20seal.%20Massage%20the%20marinade%20into%20the%20pork.%20Place%20into%20the%20refrigerator%20overnight.%20When%20you%20are%20ready%20to%20cook%20the%20pork,%20preheat%20the%20oven%20to%20400%20F.%20Place%20a%20large%20oven-safe%20(NOT%20nonstick)%20skillet%20over%20medium%20high%20heat.%20Add%20one%20tablespoon%20of%20extra%20virgin%20olive%20oil.%20When%20it%20is%20hot,%20add%20the%20pork.%20Brown%20on%20one%20side,%20about%206-8%20minutes.%20Turn%20the%20pork%20over%20and%20then%20place%20in%20the%20oven.%20Roast%20until%20desired%20doneness--for%20me%20that%20is%20an%20internal%20temperature%20of%20about%20145%20F.%20Remove%20from%20the%20oven%20and%20let%20sit%20for%2010%20minutes%20before%20slicing.%20%203.3.3070%3C/p%3E){kind=link}
