Polska Kielbasa Potato Soup

Ingredients

  • 2 c. Onion, minced
  • 3 x Carrots, minced
  • 1/4 c. Butter
  • 3 lrg Baking Potatoes, *see note
  • 6 c. Chicken Broth
  • 3/4 lb Polska Kielbasa, ** minced (note)
  • 2 c. Lowfat milk

Directions

  1. In a Dutch oven, saute/fry onion and carrots in butter until onion is tender.
  2. Add in potatoes and broth. Bring to a boil. Reduce heat; simmer until vegetables are tender, about 25 min. Remove from heat. Puree at least half of mix in blender (more blended makes creamier soup). Return to saucepan. Add in lowfat milk and sausage. Cook over low heat until sausage is heated through.
  3. NOTES :*Peeled and cubed, should equal about 4 c..
  4. Or possibly any polish sausage. Also good with no meat at all.
