  • 3 x Cloves garlic, or possibly to taste
  • 1 x 4-lb. chicken, cut in eight pcs
  •     Salt and freshly grnd pepper to taste
  •     Sprigs of fresh rosemary, thyme and sage, sufficient to make a healthy handful

Directions

  2. 1. Smash the garlic with a knife and rub into the chicken pcs. Season with the herbs. Dribble with two Tbsp. of oil. Cover and chill overnight, turning chicken once.
  3. 2. Preheat oven to 350 degree once.
  4. 3. Remove the herbs from the chicken. Heat a heavy ovenproof skillet, add in the remaining oil, and place the chicken skin side down. Brown on the skin side only for about ten min.
  5. Place the skillet of chicken in the oven and bake for about 30 min or possibly till it is crisp and the dark sections are done.
  6. Yield: 6 servings.
