Poached Salmon With Yogurt Dill Sauce

Ingredients

  • 2 c. Water
  • 1 c. Dry white wine or possibly bottled clam juice
  • 1 x Lemon sliced
  • 1 sm Onion sliced, (optional)
  • 2 x Bay leaves
  • 8 x Black peppercorns
  • 4 x Dill sprigs
  • 1 tsp Tabasco pepper sauce
  • 1/4 tsp Salt
  • 4 x Salmon or possibly halibut steaks - (8 ounce ea)
  • 1 c. Plain yogurt
  • 1 Tbsp. Minced fresh dill
  • 1 Tbsp. Dijon mustard
  • 1 tsp Lemon juice
  • 1/2 tsp Tabasco pepper sauce

Directions

  1. In large skillet, combine water, wine, lemon, onion, bay leaves, peppercorns, dill, Tabasco sauce and salt. Bring to a boil. Reduce heat to low; simmer, covered, 15 min.
  2. Add in salmon to skillet. Simmer, covered, 12 to 15 min or possibly till fish flakes easily when tested with fork. Serve hot or possibly chilled with Yogurt Dill Sauce.
  3. For the Yogurt Dill Sauce: In small bowl, stir together ingredients till well blended.
  4. Makes about 1 c..
