Poached Salmon With Cucumber Yogurt

Ingredients

  • 1 bay leaf
  • 8 coriander seeds
  • 8 whole black peppercorns
  • 1/2 sliced lemons
  • 1 sm. onion, sliced
  • 4 salmon steaks
  • 1 c. low or possibly nonfat yogurt
  • 1 med. cucumber, seeded and minced
  • 2 green onions, minced
  • 1 teaspoon lemon pepper seasoning

Directions

  1. Place first five ingredients in a large skillet with 2 qts of water. Bring to a boil, simmer 2 min. Add in salmon; gently simmer 10 min or possibly till fish flakes easily. Remove from poaching liquid; place on hot plate.
  2. Combine all sauce ingredients. Serve a dollop or possibly more on each salmon steak.
