- 2 small flour tortillas
- 1/4 cup shredded mozzarella
- 5 slices pepperoni
- 1-2 tbs pizza sauce
- olive oil for frying
- (spinach mushroom variety):
- 2 small flour tortillas
- 1/4 cup shredded mozzarella
- 2 tbs cooked chopped spinach, drained
- 2 tbs marinated mushrooms
- olive oil for frying
- Marinated Mushrooms:
- 1 small can mushrooms, drained (4 oz)
- 2 tbs olive oil
- 1 tbs balsamic vinegar
- 1/8 tsp basil (or 2 leaves fresh, chopped)
- 2 cloves garlic, crushed
- salt & pepper to taste

%3C/p%3E%3Cp%3EWant%20a%20quick%20lunch%20or%20snack?%20%20You%20have%20it%20right%20here.%20%20One%E2%80%99s%20a%20more%20gourmet%20%E2%80%9Cwhite%E2%80%9D%20pizza%20and%20the%20other%20is%20the%20old%20classic.%3C/p%3E%3Cp%3EYou%E2%80%99ve%20got%20your%20choice%20here%E2%80%93go%20gourmet%20with%20a%20white%20pizza%20that%20features%20some%20pretty%20great%20marinated%20mushrooms,%20or%20go%20classic%20with%20pepperoni.%20%20Maybe%20have%20both!%3C/p%3E%3Cp%3EI%E2%80%99m%20a%20huge%20fan%20of%20Schwan%E2%80%99s%20spinach%20&%20mushroom%20pizza%20so%20I%20wanted%20to%20create%20something%20cheaper%20and%20similar.%20%20Also%20I%20wanted%20something%20that%20I%20could%20make%20in%20a%20single%20serving.%20%20With%20the%20Schwan%E2%80%99s%20pizza,%20I%E2%80%99d%20have%20to%20end%20up%20re-heating%20because%20it%20was%20too%20much%20for%20me%20to%20eat%20in%20one%20sitting.%3C/p%3E%3Cp%3EI%20used%20canned%20mushrooms%20in%20this%20since%20I%20didn%E2%80%99t%20have%20any%20fresh.%20%20Either%20way,%20they%20taste%20good!%20%20I%20prefer%20fresh,%20and%20think%20it%20would%20taste%20a%20bit%20better,%20but%20there%E2%80%99s%20SO%20much%20flavor%20in%20the%20marinade,%20that%20it%E2%80%99s%20that%20that%E2%80%99s%20the%20star%20here,%20not%20the%20mushroom!%3C/p%3E%3Cp%3EI%20used%20smaller%206-inch%20flour%20tortillas%20here%20as%20it%E2%80%99s%20my%20favorite%20size,%20but%20if%20you%20want%20large%20then%20by%20all%20means%20make%20it%20that%20way%E2%80%A6there%E2%80%99s%20no%20real%20%E2%80%9Cmeasure%E2%80%9D%20here%20to%20make%20these%20and%20what%20I%20give%20is%20approximate%20at%20best%20(to%20my%20taste)%20so%20feel%20free%20to%20use%20less%20or%20more%20of%20anything%20mentioned%20here.%20%20The%20only%20thing%20that%20is%20not%20approximate%20is%20the%20tortilla%E2%80%93you%20need%202%20for%20each%20%E2%80%9Cpizza.%E2%80%9D%3C/p%3E%3Cp%3EPizza%20Quesadillas%20(Pepperoni%20cheese%20option)%3C/p%3E%3Cp%3EPizza%20Quesadillas%20*%3C/p%3E%3Cp%3ETo%20make%20marinated%20mushrooms,%20place%20al%20ingredients%20in%20a%20resealable%20container%20with%20a%20tight-fitting%20lid.%20%20Shake%20well%20and%20refrigerated%20at%20least%202%20hrs.%3C/p%3E%3Cp%3ETo%20assemble%20pizza,%20place%20ingredients%20on%20top%20of%201%20tortilla.%20%20Top%20with%20the%20other%20tortilla.%3C/p%3E%3Cp%3EHeat%20about%201%20tsp%20olive%20oil%20in%20a%2010-inch%20skillet%20over%20medium%20heat.%20%20Place%20%E2%80%9Cpizza%E2%80%9D%20in%20pan%20and%20saute%20for%20about%205%20minutes%20(bottom%20tortilla%20should%20start%20to%20get%20crispy);%20turn%20and%20saute%20for%20another%205%20minutes.%3C/p%3E%3Cp%3EUse%20a%20sharp%20knife%20or%20pizza%20cutter%20to%20cut%20into%20quarters.%20%20Serve%20immediately.%3C/p%3E%3Cp%3EServes%201%3C/p%3E%3Cp%3E*NO%20NUTRITIONAL%20INFO%20IS%20GIVEN%20FOR%20THIS%20AS%20INGREDIENT%20AMOUNTS%20WILL%20VARY%20TO%20TASTE.%3C/p%3E%3Cp%3ESpinach%20&%20Mushroom%20Pizza%3C/p%3E%3Cp%3EPepperoni%20Pizza%20Quesadillas%3C/p%3E%3Cp%3EYum%3C/p%3E){kind=link}
