  • 1 c. uncooked regular rice
  • 1 3/4 c. water
  • 1 bay leaf
  • 1 teaspoon salt
  • 1 teaspoon lemon juice
  • 2 (10 ounce.) pkg. frzn green peas, cooked
  • 1/2 c. Italian salad dressing
  • 1/4 c. minced onions
  • 1/4 c. minced green pepper
  • 1/4 c. minced pimento-stuffed olives
  • Lettuce leaves
  • 4 ounce. Cheddar cheese, cubed
  • 1/2 c. slivered almonds
  • 3 or possibly 4 hard-boiled Large eggs, sliced

Directions

  1. Mix rice, water, bay leaf, salt and lemon juice in saucepan. Heat to boiling, reduce heat and cover. Simmer 15-20 min. Remove bay leaf and cold rice slightly.
  2. Mix rice with remaining ingredients except lettuce, cheese, almonds and Large eggs. Cover and chill at least 3 hrs, not more than 24 hrs.
  3. Place rice mix on lettuce-lined platter. Sprinkle with cheese and almonds. Arrange Large eggs around edge of platter.
