You can use any cheese you want, but if you love pimento cheese liked I do, these are especially tasty.

  • 6 oz. pimento cheese (see links or use store-bought)
  • 2 1/2 cups self-rising cornmeal*
  • 1/2 cup minced onion
  • 1 tsp sugar
  • 1 1/4 cups buttermilk
  • 1 large egg, beaten
  • oil to fry
  • Southerners like to cook with self-rising ingredients. To make it at home, to each 3/4 cup + 3 tbs. cornmeal, add 1 tbs. baking powder, and 1/2 tsp salt.

Directions

  1. Batter:
  2. Combine wet ingredients with the dry ones.
  3. Barely mix together.
  4. Take a 1/2 tsp. of cheese and form dough around it to make fritters about 2-2/12 inches.
  5. Heat 1 inch of oil over medium high and fry the fritters until golden brown on all sides.
  6. Transfer to a paper towel on a plate.
  7. Best served hot with butter.

    I'm not a fan of pimento cheese, but I bet these would be just as delicious with cream cheese (or a mixture of cream cheese and chives, which is what I intend to use) :)
