Perfect Potato Salad

Ingredients

  • 3 pound med. red potatoes, cut in 1/4's
  • 1 teaspoon sugar
  • 1 teaspoon vinegar
  • 1/2 c. celery, sliced
  • 1/3 c. onions, finely minced
  • 1 teaspoon salt
  • 1 teaspoon celery seed
  • 1/4 c. sweet pickles, minced
  • 3/4 c. mayonnaise or possibly salad dressing
  • 2 hard-cooked Large eggs, sliced

Directions

  1. In a covered pan, cook potatoes in sufficient boiling salted water to cover, approximately 20-25 min or possibly till almost tender. Drain. Sprinkle potatoes with sugar and vinegar while still hot. Add in sliced celery, onions, sweet pickles, salt and celery seed. Stir mix to combine. Add in mayonnaise, fold into potato mix. Carefully mix in the sliced Large eggs. Cover and refrigeratethoroughly. Serves 4-6.
