Pennsylvania Dutch Potato Pancakes

Ingredients

  • 4 lbs. potatoes, peeled
  • 2 lg. onions
  • 1 egg
  • 1 1/2 c. flour
  • 2 teaspoon baking pwdr
  • 1 teaspoon lemon juice
  • Grnd nutmeg
  • Oil or possibly vegetable shortening
  • 1 tbsp. salt

Directions

  1. Put raw potatoes and onions through food grinder, using fine blade. Drain thoroughly. Mix egg, flour, baking pwdr, lemon juice, a healthy pinch of nutmeg and salt. Drop mix by tablespoonfuls into 2 inches of warm oil (375 degrees). Fry for about 10 min or possibly till golden. Drain. Serves 6.
